Best DH Squash Dishes of the 2018-2019 School Year
by Max Rosenberg '21, April 18, 2019
The Emerson College 2018-2019 academic year is coming to a close. A lot has happened this year. The price of tuition was raised, a fascist group was formed on campus, and I failed all my classes. Nothing has been more impressive though then the number of ways that the DH has utilized squash in their meals. It truly pains me to report that this magnificent squash run has finally come to an end. That’s right, the DH is out of squash.
All good things must come to an end, and now it only seems right to have a proper send-off for this squash filled year. Here are the top five squash meals served at the DH this year.
Spaghetti with Squash and Almonds
Al dente spaghetti with a healthy dollop of squash and a sprinkle of almonds. Fall here we come. Pairs really nicely with Dr. Pepper.
Should the center of Godiva chocolate truffles be scooped out and replaced with squash? Probably not, it wasn’t very good.
5. Squash Pizza
A twist on a familiar classic, squash pizza was simple yet elegant. A normal cheese pizza was transformed by the addition of raw squash placed delicately on top of a bed of mozzarella cheese. 4/10 Yum Yums
4. Squash Nachos
Imagine this: you’ve got your chips, your guac, your jalapenos, and you’re all ready to go and pour that gooey, gooey cheese on top and suddenly whoa, it’s pureed squash. Talk about a fiesta. 6/10 Yums Yums
3. Squash Hands
I really liked that one week when the DH employees put squash at the end of their sleeves and pretended they were hands. Thumbs up to this dish! 8/10 Yums Yums
2. Squash Infused Water
Ever been drinking water and wished it tasted like squash? Well, here you go. The DH put squash in the water cooler and it was baller.

1. Raw Squash
French Chef Auguste Escoffier once said, “The greatest dishes are very simple,” and this seems to be the case with squash. The DH did a lot of great things with squash this year, there is no doubt about that. But the best thing they did was make them available to us raw. I know that myself and many others would often walk out of the DH munching on a raw squash. 11/10 Yums Yums
In many ways, the use of squash in the DH this year was representative of what every Emerson student hopes to achieve with their work. It was bold, it was daring, and it wasn’t afraid to fail. This was a list of only the delicious squash dishes, but for every good dish, there were a couple of bad ones. The DH’s ability to learn from failure is what brought us dishes like squash water. So I hope that every student can learn from what the DH did this year and never be afraid to take a risk.
